AIR FRYER CHEESECAKES

I know you guys see me posting about Instant Pot cheesecakes ALL the time. This is my very first air fryer cheesecake and I am very impressed.

When we were planning this air fryer cheesecake, I honestly thought the first test cheesecake would be a disaster. It wasn’t! It turned out so creamy and decadent. A total surprise for me.

If you haven’t purchase an air fryer yet, I highly recommend it! We use the air fryer and Instant Pot 99% of the time when we are cooking (and now baking, who needs an oven???). This air fryer is the closest model to the one we have that I could find to recommend to you guys 🙂

INGREDIENTS NEEDED FOR AN AIR FRYER S’MORES CHEESECAKE

Crust:

Graham Crackers

Butter– I use salted.

Filling:

Cream Cheese– Obviously, this is the main ingredient in a cheesecake. It is so important to use good quality cream cheese for a cheesecake. I use Philadelphia. Make sure the cream cheese is at room temperature for beginning.

Granulated Sugar

Flour– used as a thickening agent.

Chocolate Chips: I recommend using a quality brand like Ghirardelli or similar.

Cocoa Powder: I like to use a little cocoa powder in addition to chocolate just to enhance the chocolate flavor.

Mini Marshmallows: You can’t have a S’mores Cheesecake without marshmallows.

Heavy Cream: I use heavy cream in my cheesecakes instead of sour cream. I find that the heavy whipping cream gives the cheesecake a perfect “whipped” light and creamy texture.

TIPS FOR THE PERFECT AIR FRYER CHEESECAKE

1. Make sure your cream cheese is at room temperature before beginning. It is really important to make sure that you get that perfect consistency. Also, whip your cream cheese for 3-4 minutes before adding any other ingredient. Trust me…

2. Scrape the sides and bottom of your mixing bowl after adding each ingredient to make sure everything incorporates entirely and you don’t end up with lumpy cheesecake batter.

3. Add your eggs last, and mix as little as possible after adding the eggs. The batter should be completely smooth and lump free before adding your eggs. Mix JUST enough to break the yolk and it combines well in the batter.

4. You CAN use a different size springform pan, like a 6 or 8 inch, but remember that the thickness of the cheesecake will vary if you change springform sizes. Also, you will have to adjust the cooking time.

I use a 7-inch springform for this recipe. This springform pan is my ALL time favorite. I love it so much and use it all the time for Instant Pot and Air Fryer cheesecakes.

5. Let the cheesecake set in the refrigerator over night to completely set. With Instant Pot and Air Fryer cheesecakes they will look a little undercooked when you remove them. That is OKAY! Just put it in the fridge and it will be perfect the next day.

SPECIAL EQUIPMENT USED

I did use a kitchen torch for the toasted marshmallows on top. This isn’t necessary but I do highly recommend using a torch over the oven broiler. The broiler heats the entire cheesecake, while the torch you can have more control over where the heat is.

If you decide to use the broiler, keep a close eye on the cheesecake. After the marshmallows have browned, I recommend transferring the cheesecake back to the fridge for 15-20 minutes so it can set up again.

HOW TO GET THE PERFECT SLICE OF CHEESECAKE

I love adding this tip in my posts. This isn’t a huge concern for most people, if you are serving a party, or taking pictures for whatever reason, you will want a perfect slice of cheesecake.

To get the perfect slice, take a large butcher knife, and run it under hot water for 2-3 minutes to warm it up. You can also use a kitchen torch but be careful. Remove any water from the knife and make your first cut into the cheesecake. Run the knife under water to clean, wipe off the excess water, and make your second cut.

Equipment

Ingredients
  

Crust

  • 1 1/2 cups graham cracker crumbs
  • 4 Tablespoons butter melted

Marshmallow Layer

  • 12 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 tablespoon flour
  • 1 cup mini marshmallows
  • 1/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 egg

Chocolate Layer

  • 12 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 tablespoon flour
  • 1 tablespoon cocoa powder
  • 1/2 cup semi-sweet chocolate chips
  • 1 Tablespoon heavy whipping cream
  • 1 egg

Toppings (optional)

  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy whipping cream
  • mini marshmallows `
  • graham crackers crushed

Instructions
 

Crust

  • Prepare a 7-inch spring from pan by spraying generously with non-stick spray. Make sure that the pan will fit in your Air fryer FIRST!
  • Add graham crackers into a food processor and pulse until you get 1 1/2 cups crumbs. Add in melted butter and pulse until combined.
  • Pour the crumbs into the bottom of the springform and use the back of a spoon or your hand to press the crumbs down to form the crust. Bring the crumbs up the sides about 1 inch.
  • Place the springform in your air fryer and set to 350 for 8 minutes.

Marshmallow Layer

  • In the bowl of a stand mixer equipped with a paddle attachment, cream the cream cheese for 3-4 minutes until smooth.
  • Add in the sugar, flour, and vanilla and mix until combined.
  • In a medium microwave safe bowl, add the marshmallows and heavy cream and heat on 30 second increments until melted and smooth.
  • Add the melted marshmallows and vanilla to the cream cheese mixture and mix until combined. Scrape the sides and bottom of the bowl. Mix for an additional 1 minute.
  • Add the egg in last and mix until JUST combined. Be careful not to overmix.
  • Pour the marshmallow layer over the top of the baked crust and smooth.

Chocolate Layer

  • In the bowl of a stand mixer equipped with a paddle attachment, cream the cream cheese for 3-4 minutes until smooth.
  • Add in the sugar, flour, and cocoa powder and mix until combined.
  • In a medium microwave safe bowl, add the chocolate chips and heavy cream and heat on 30 second increments until melted and smooth.
  • Add the melted chocolate into the cream cheese mixture and mix until just combined and smooth. Scrape the sides and bottom of the bowl, and mix for an additional minute.
  • Add the egg in last and mix until JUST combined. Be careful not to overmix.
  • Carefully spoon the chocolate layer over the top of the marshmallow layer and smooth.

Baking

  • Cover the top of the springform pan tightly with aluminum foil and place in the air fryer on 300 degrees/F for 40 minutes. The cheesecake is done when the outsides are set but the center SLIGHTLY jiggles. It should resemble Jell-O. If needed, add the cheesecake back in for 3-4 minutes. Keep in mind the cheesecake will set up as it cools overnight.
  • Once the timer is up, allow the cheesecake to cool slowly by turning off the air fryer, but leave the cheesecake in the fryer basket for about 15 minutes. After 15 minutes, remove form the air fryer and let the cheesecake cool to room temperature.
  • Once the cheesecake is cool, transfer to the refrigerator to set for at least 6 hours but overnight is recommended to set completely.
  • Once the cheesecake is set and you are ready to serve, make the ganache by adding the chocolate and heavy cream into a small microwave safe bowl and heat on 30 second increments until melted and smooth. Pour over top chilled cheesecake.
  • Top the ganache with mini marshmallows and use a small kitchen torch to brown the tops of the marshmallows. Sprinkle with crushed graham crackers and serve immediately.
  • Store any leftovers in an airtight container in the refrigerator for up to three days.

Notes

NOTE: Please note that each air fryer is different and heats differently. I recommend you start checking your cheesecake around 45-50 minutes to make sure it doesn’t over cook.
