What Are Thumbprint Cookies?

Thumbprint Cookies are a lot like classic sugar cookies, but with a twist. They have a fruit-filled center that ends up with more of a jelly-like consistency after the baking process. The fruit center adds a special touch and easily sets these cookies apart from traditional sugar cookies that don’t have that gooey, sweet center!

Ingredients for the Chocolate Cherry Thumbprint Cookies

  • Unsalted Butter – Allow your butter to sit out for several minutes to soften before you use it.
  • Granulated Sugar – You can’t create the sugar cookie dough without having some granulated sugar to add to the mix.
  • Brown Sugar – The brown sugar adds a special touch and is an excellent addition to this recipe.
  • Unsweetened Cocoa Powder – Enjoy the addition of cocoa powder to create a chocolatey version of these cookies.
  • Cherry Pie Filling – You’ll need to use around half of a 21-ounce can for this recipe.
  • Chocolate Almond Bark – Don’t forget the tasty chocolate almond bark. The brand doesn’t matter.

You also will need pure vanilla extract, baking powder, unbleached flour, eggs, salt, and semi-sweet mini chocolate chips for this recipe.

How to Make Chocolate Cherry Thumbprint Cookies

Follow these condensed instructions to easily prepare the Chocolate  Thumbprint Cookies.

  1. Set your oven to 350 degrees and place parchment paper on top of a baking sheet.
  1. Grab a bowl and combine your sugars with butter before beating the eggs in one at a time and then adding the vanilla.
  1. Grab a smaller bowl and combine your flour with baking powder, salt, and cocoa powder together before mixing the dry ingredients with the wet ingredients.
  1. Fold the semi-sweet mini chocolate chips into the dough. Use a cookie scoop to create cookie balls, setting them 1” apart from one another on your baking sheet.
  2. Use the end of a spoon or spatula to make a hole in each cookie and then add your pie filling into each hole. Add one cherry on top of the filling for each cookie.
  1. Set in the oven and bake for around 10 minutes. Cookies will look set and continue to bake on the baking sheet.
  1. Remove from the oven and set off to the side to cool. While you wait for the cookies to cool, heat your almond bark and then drizzle the melted almond bark over your cookies as a finishing touch.

Notes and Tips for Chocolate Cookies with Cherries

  1. If you want the cookies to have a glassy or sparkly appearance, sprinkle them with a bit of granulated sugar the minute you remove them from the oven. You don’t need too much sugar, just a bit will do you!

  1. Make your almond bark even easier to work with by adding ⅛ teaspoon of coconut oil into the bowl with the almond bark while heating it.

Can I freeze the cookie dough?

If you’d like to prepare the dough in advance, you can do so. When planning to freeze the cookie dough, be sure to place it in a spacious container with a lid before labeling it and putting it in the freezer for up to three months. Be sure to allow the dough to defrost in the fridge before you start to prepare these cookies.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups unbleached flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet mini chocolate chips
  • Cherry pie filling about half a 21 ounce can
  • 6 ounces of chocolate almond bark

Instructions

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • In a large bowl, combine butter, granulated sugar, and brown sugar.
  • Beat in eggs one at a time then add the vanilla.
  • In a small bowl, combine unbleached flour, cocoa powder, baking powder, and salt.
  • Mix dry ingredients into the wet ingredients. Dough will be thick and crumbly. You may have to use your hands to get it to come together.
  • Fold in semi-sweet mini chocolate chips.
  • Using a 1 tablespoon cookie scoop, create cookie balls and place them 1” apart on the baking sheet.
  • Use the end of a large baking spoon or spatula to create a hole in the middle of each cookie.
  • Put some pie filling in each hole and then top with one cherry.
  • Bake for 10-11 minutes. Cookies will look set and will continue baking on the baking sheet (do not over bake).
  • Remove from the oven and let cool on the baking sheet.
  • While cooling, heat chocolate almond bark in a microwave safe bowl in 20-30 second increments until melted completely (stirring between each).
  • Drizzle chocolate over cherry thumbprint cookies and let cool completely.
